Mini Golden Corn Quiches
For a beautiful rich, silky finish I’ve used cream in these quiches, but if you’d prefer a lighter version, then feel free to use milk. They make a great lunch box idea or are fabulous for kid’s birthday parties. They can be made in advance and then frozen until you’re ready to heat and use.

3 sheets frozen puff pastry, partially thawed
4 eggs
¼ cup thickened cream
270g can GOLDEN CIRCLE Creamed Corn
100g sliced leg ham, chopped
2 spring onions, sliced
Freshly ground black pepper and salt, to taste
½ cup grated tasty cheese
Method
- Cut 24 x 7cm rounds from pastry sheets. Press into 2 lightly oiled x 12 ½ cup patty pan tins. Prick bases with a fork and set aside.
- Whisk together the eggs and cream. Fold in the GOLDEN CIRCLE Creamed Corn, ham and spring onion and season to taste with freshly ground pepper and salt.
- Spoon mixture into pastry cases, sprinkle with cheese and bake in a preheated oven of 200˚C for 12 – 15 minutes or until golden and set. Serve warm from the oven or at room temperature.
