Cheesy Corn Fritters
These cheesy corn fritters are perfect for snacks, brunch, lunch or dinner and you'll be tempted to eat them at any other time throughout the day. Golden Circle corn and cheese make for a flavoursome and tasty journey for everyone to munch on! Corn fritters make a wonderful dish to serve as a light lunch or brunch and are especially good if you make them as smaller fritters to pass around with drinks. Match with smashed avocado and sour cream, top with coriander (parsley and chives are also winners) for a real crowd pleaser.
¾ cup SR flour
½ cup milk
20g butter, melted
410g can GOLDEN CIRCLE Corn Kernels, drained
½ cup grated cheddar cheese
¼ cup grated parmesan
2 tbsp chopped chives
2 tsp olive oil
guacamole, sour cream and coriander, for serving
Place flour into a large bowl. Whisk together the milk, eggs and butter. Stir into flour until batter is smooth.
Add the GOLDEN CIRCLE corn, both cheeses and chives. Season well and mix.
Heat oil in a large non-stick frying pan over medium heat. Add spoonfuls of mixture to pan and cook for 2 minutes each side until golden. Drain on paper towel.
- Serve warm topped with smashed avocado, sour cream and herbs of your choice.
Tip: Pair with a light rocket and roast pumpkin salad with balsamic dressing for a refreshing and tasty lunch meal!
