For salmon:
1 pound sockeye or sushi-grade salmon cut into 3/4 inch cubes
1/4 cup soy sauce or tamari
1tsp rice wine vinegar or apple cider vinegar
1tsp Sriracha or chilli sauce
1tsp sesame oil
For Poke:
1 can Golden Circle Pineapple Pieces 420g
Cooked and cooled short grain rice
Avocado (sliced)
Carrot (shredded)
Cucumber (sliced)
Red capsicum (sliced)
Edamame beans
Red/purple cabbage (shredded lengthways)
Sesame seeds

Method
- In a glass blow, combine the salmon, soy sauce (or tamari), vinegar, Sriracha and sesame oil. Stir gently to combine and set aside.
- In your serving bowl, add the rice and smooth out to create a flat surface
- In sections, add the edamame beans, Golden Circle Pineapple Pieces, capsicum, cucumber, red cabbage, cashews, avocado and carrot
- Add salmon mix in the middle
- Sprinkle with sesame seeds
- Enjoy!
